Aaah! The Word “Biryani” itself sounds orgasmic, the taste and aroma, looks that can attract my taste buds during any hour of the day. Some of you must be keen to know when this ‘pulao’ becomes a ‘Biryani’ or what really is the difference? The possible distinction can be that a Biryani requires layering of spices on top, meat in the middle and rice being the third layer. Moreover, Biryani tends to be scented with kewda, rosewater, etc.

Calcutta Biryani is the birthplace of Lucknowi Biryani. The poorer households of Calcutta were unable to afford chicken, mutton, etc. so they used potatoes instead and later on it became the speciality of Calcutta Biryani. This biryani is much lighter on spices and the rice is flavoured with rose water along with saffron to give it a saffron shade, making it different from other Biryani.
